This recipe is a particular favourite of mine, as I created it years ago when I was just starting out on my health and weight loss crusade. I was just starting to cook a few things again after hating cooking for so long. For me cooking meant putting on weight, so it was a hate/hate relationship for many years.
So now I didn’t hate it any more because the food I was discovering didn’t actually make me fat, but long lists of ingredients and complicated methods in recipes still gave me the willys, so I was determined to simplify all I could to make the whole experience quick and joyful.
So I found a recipe somewhere and removed three quarters of it, changed the sweetener, changed the nuts, changed the cooking method and hoped like hell it would still all stick together.
And so it did.
But not only did it work, it was the most amazing tasting biscuit ever – like the best shortbread I’ve ever tasted. Just without flour, eggs, refined sugar, butter and whatever else normally goes in there. From that moment I was hooked on super easy healthy cooking.
So without further gabbling on, here is the recipe…
Macadamia Ooh Ahh biscuits
1 cup raw macadamia nuts
1 TBS organic maple syrup
1 tsp vanilla essence
How you do it…
Whizz all ingredients in a food processor until it all sticks together.
Take teaspoons full and place on baking paper lined tray and flatten a little.
Now there are two ways to cook them…
1. Dehydration method
Have oven barely on at like 30° C (86° F) and dehydrate for 24 hours.
Now this is my preferred method and if you have a dehydrator it would be even better. They turn out a little crisp but not ‘cooked’ and retain all the goodness of raw macadamia nuts. However what is the likelihood that anyone would be happy to leave their oven on for all that time and even less people are likely to have a dehydrator, so here is a way that everyone can cook them…
2. Slow bake method
Oven on 100° C (212°F) for 1 hour.
Allow to cool before touching.
So with this method you have basically cooked the nuts, so the taste is awesome but completely different to the first method.
Both ways though are divine and macadamia nuts are one of the healthiest nuts you can eat due to their balance of Omega 3 & 6 at 1:1. Less inflammatory than other nuts.
